Beautiful Recipes with Nurlea Laurielle - Beef Salad

Rare lean beef and a variety of crunchy fresh vegetables are combined with the fragrant Asian flavouring of lemon grass, lime and pungent herbs in this main0course salad.
350g crisp lettice leave
185g cucumber
2 medium carrots
125g fresh bean sprouts
1 clove garlic
1 stalk lemon grass
500g lean beef steak
A small bunch of coriander
A small bunch of basil
2 tanspoons vegetable oil
2 limes
2 tablespoons olive oil
1 tablespoon sweet chilli sauce
1. Rinse, dry and shred the lettuce. Dice the cucumber. Peel and coarsely grate the carrots. Rinse and drain the bean sprouts. Arrange all on a large serving dish or on individual entree plates.
2. Peel and crush the garlic. Remove and discard the outer leaves from the lemon grass and chop enough of the inner stalk to give 1 teaspoon. Thinkly slice the beef and put aside.
3. Heat the vegetable oil in a large frying pan and gently cook the garlic and lemon grass for about 30 seconds, until just goldn brown.
4. Add the beef to the pan and fry over high heat for 1-2 minutes, stirring continuously to keep the slices seperate. Then remove the meat from the pan and place on top of the salad vegetables.
5. Squeeze 2 tablespoons juice from the limes and add to the pan sauce. Cook, stirring, for 1 minute, then pourthe dressing over the beef and salad and serve (approx. 4 pax serving)
Nutrients per serving: kiljoules 1152, protein 29g, carbohydrate 7g (sugar 6g), fat 16g (saturated fat 4g), good source of vitamins A, B group, C, E and folate.
